Pork Chops in Green Sauce

  • 1 tablespoon vegetable oil
  • 1/4 onions
  • 1 clove garlic
  • 8 tomatillos, in halves
  • 2 Habanero chiles
  • 1/4 cups fresh cilantro
  • 1 teaspoon coarse salt
  • 2 allspice berries
  • 1/2 cups chicken broth
  • 1 cup new potatoes, cooked and in halves
  • 1 cup nopal, cooked and in cubes

  • 4 pork chops, smoked
  • corn tortillas, for serving

  • For the green sauce, in a deep skillet, heat the oil and fry the onion, garlic, tomatoes, and chiles until they soften. Add the cilantro, epazote, coarse salt, black pepper, and broth; cook for an additional 10 to 15 minutes or until the liquid reduces. Let it cool slightly.
  • Blend the mixture until you obtain a smooth sauce and cook in a small pot for another 10 minutes, add the potatoes and the nopales, continue cooking for 5 minutes, adjust seasoning, and set aside.
  • In a skillet, heat the oil and sear the chops on both sides, season with salt and pepper.
  • On a plate, serve one pork chop and drizzle with the green sauce, garnish with epazote. Serve with tortillas and refried beans.
