Baked Tacos with Adobo Pork

The recipe for baked tacos with adobo pork is a very simple preparation; you only need leftovers from the adobo pork you made the night before, flour tortillas, and a little cheese. Stuffed pork tacos are delicious!

  • pork loins, adobo (leftovers) as needed
  • 10 flour tortillas
  • 1/2 cups Cotija cheese, shredded
  • 3/4 cups sour cream
  • vegetable oil

  • Cut or shred the adobo pork and reserve it along with its sauce.
  • Heat the flour tortillas to make them easier to handle. Layer two tortillas (one third of one on top of one third of the other), fill them with the pork, form a large taco, and secure with toothpicks.
  • Heat a pan with enough oil and fry the tacos, being careful not to burn them. Drain and remove excess grease with paper towels.
  • Preheat the oven to 170° C. Take the tacos and remove the toothpicks, place them in a baking dish, and pour the adobo sauce over the pork.
  • Bake the tacos for 10 minutes. Remove from the oven, garnish with cream and cotija cheese, and serve.
