1 pork loin , (1.5 kg) butterflied
5 tablespoons unsalted butter
1 apple, peeled and diced into small cubes
1 onion, finely chopped onion
1 sprig celery, finely chopped
1/2 cups nut , chopped
1 cup apple purée
1 1/2 cups water
1/2 baguettes, in pieces
1/2 teaspoons cinnamon powder
1/2 teaspoons salt
1/4 teaspoons ground cloves
1/4 teaspoons nutmeg powder
1/4 teaspoons ginger powder

Melt the butter in a skillet, add the apple, onion, celery, and walnut. Cook until the ingredients have softened.
Add the apple puree, then incorporate the water and the bread pieces.
When the bread has absorbed the juices, season with the spices (cinnamon, salt, clove, nutmeg, and ginger).
Open the loin and evenly place the filling along it. Roll it up and tie it with string so it doesn’t come apart.
Sear the loin in a pot with hot oil.
Place the meat in a baking dish, cover it with aluminum foil, and bake for 45 minutes at 180°C.
