Delicious Peanut Pork

In Mexico, we love encacahuatado; this dish is based on beef, chicken, or pork, accompanied by a seasoned, smooth, and creamy peanut sauce with dried chiles. Traditionally, this dish is prepared for special occasions and family celebrations. You have to try it!

  • 1 kilo pork loin
  • 2 teaspoons salt
  • 3 cloves garlic, finely chopped
  • 1 tablespoon vegetable oil
  • 3 cloves garlic, chopped for the sauce
  • 1/2 white onions, cut into cubes for the sauce
  • 6 tomatoes, ripe, cut into quarters for the sauce
  • 2 guajillo chiles, cleaned and deveined, for sauce
  • 2 chipotle chiles, dried, cleaned and deveined, for sauce
  • 1 1/2 cups peanuts, toasted, for the sauce
  • 1 teaspoon allspice berry, for the sauce
  • 2 cloves, for the sauce
  • 1/4 cinnamon sticks, for the sauce
  • 2 cups chicken broth, for the sauce
  • 1 pinch salt
  • 1 tablespoon vegetable oil
  • toasted peanuts, for decoration
  • fresh cilantro, for decoration

  • Preheat the oven to 200° C.
  • On a baking tray lined with aluminum foil, place the loin and tie with a hemp string, cover with garlic, salt, and oil, wrap well with aluminum foil, and bake for 45 minutes or until it reaches an internal temperature of 65° C. Remove from the oven and cut into medallions on a cutting board, set aside.
  • For the sauce, heat a small pot over medium heat with the oil, cook the garlic and onion until they become translucent, add the tomato with the chiles, peanuts, allspice, cloves, cinnamon, fill with chicken broth, season with salt to your liking, and cook until the ingredients are almost broken down. Let it cool slightly.
  • Blend all the ingredients until you obtain a smooth and creamy sauce, strain if necessary.
  • Heat a small pot over medium heat with the oil and fry the sauce, when it comes to a boil, cook for 5 minutes and remove.
  • Serve the slices of loin over a pool of sauce and drizzle a little more on top. Garnish with peanuts and cilantro.
