Place the loin in a large lightly greased roasting pan, spreading 1/2 cup of the dressing over the loin. Mix the potatoes and beets with 2 tablespoons of the remaining dressing, placing them around the loin and bake for 15 min.
Mix the onion and carrot with the remaining dressing and add to the loin.
Bake for 1.5 hours or until the meat is well cooked and the vegetables are tender. Let rest for 10 min before slicing.
Slice and serve accompanied by the vegetables.
