Pork Filling for Tamales

455 grams pork meat, leg
2 1/2 cups water
1/2 onions
1 clove garlic, peeled
table salt
1 leaf bay
8 grains black pepper
1 red chile, dry
Preparation

Remove the fat from the meat.
Cut into cubes and place it in a large pot.
Add enough water, onion, garlic, bay leaf, salt, pepper, and chili.
Let it boil, constantly removing the foam from the surface.
Reduce the heat, cover, and let it cook for an hour.
Drain the broth (remember to reserve 1 1/4 cups) and let the meat cool.
Shred with a fork and, if desired, refrigerate overnight.
