Pork Filling for Tamales

This recipe is a delicious pork filling dish for tamales. Prepare it for your tamales and change their traditional flavor. Ideal for breakfast. Serve with beans.

  • Remove the fat from the meat.
  • Cut into cubes and place it in a large pot.
  • Add enough water, onion, garlic, bay leaf, salt, pepper, and chili.
  • Let it boil, constantly removing the foam from the surface.
  • Reduce the heat, cover, and let it cook for an hour.
  • Drain the broth (remember to reserve 1 1/4 cups) and let the meat cool.
  • Shred with a fork and, if desired, refrigerate overnight.
