Pork in Peanut Sauce

  • 1 cube Knorr® tomato bouillon
  • 1 teaspoon lard
  • 3/4 cups unsalted peanuts
  • 2 corn tortillas
  • 1 teaspoon piquín chile, dry
  • 2 cloves garlic
  • 1/8 teaspoons cumin powder
  • 1 pinch cinnamon powder
  • 1/8 teaspoons ground black pepper
  • 1 pinch cilantro seeds, powder
  • 450 grams pork loin, in medallions

  • In a skillet over medium heat without oil, toast the tortillas until crispy.
  • In the same skillet, toast the peanuts, chili, and garlic.
  • Soak the chili in 1 cup of hot water until softened and blend with the rest of the seasonings.
  • Melt the lard in the skillet and fry the pork medallions until golden brown.
  • Incorporate the peanut mixture, add Knorr® Tomato Seasoning, and reduce the heat.
  • Cook for 10 minutes. If desired, you can use chicken instead of pork.
