We present to you a delicious pork loin in the style of Yucatecan cuisine, pork loin al pibil. It is an easy recipe that you will love, the meat turns out very juicy and the sauce is spectacular.
Blend the onion, garlic, salt, and pepper with a little water in the blender. Pour this mixture into a large plastic bag and add the loin. Mix well with your hands to ensure the loin is coated and let it marinate for 1 to 6 hours.
In a separate bowl, mix the Adobo Pibil Cocina Mestiza with the orange juice and the lime juice.
Preheat the oven to 170°C.
In an oven-safe pot, heat the oil on the stove. Pour in the loin and the marinade and brown it on both sides. Turn off and remove from the stove.
Pour the adobo mixture over the pork. Bake for 1 hour. Check if it is cooked in the center.
Serve with Salsa Habanera Cocina Mestiza. And accompany with beans, rice, and avocado.
