Pork Loin in Chipotle and Bell Pepper Sauce

  • corn oil
  • 1 cup onion, finely chopped
  • 1 clove garlic, finely chopped
  • 1/4 cups celery, chopped
  • 1/4 cups carrot , chopped
  • 2 tablespoons flour
  • 1 can beef broth
  • 1 cup red bell pepper, roasted, peeled, and chopped
  • 1/3 cups apple juice
  • 1/2 cups whipping cream
  • 1 chipotle chile, seedless
  • 3 tablespoons chipotle chilli sauce, or to taste
  • 1 kilo pork loin
  • 1 cup dry white wine

  • Heat the oil and sauté the vegetables for about 5 minutes. Add the flour and let it cook for a few minutes.
  • Add the apple juice, the broth, the chiles, cream, and let the sauce thicken. Transfer to a blender and blend.
  • Strain the sauce and adjust the salt and pepper. Add more juice and broth as needed.
  • Season the loin with salt and pepper. Sear the loin in well-heated oil. Place it in a baking dish and put it in the oven with the wine. Cover it with aluminum foil until it is well cooked.
  • Remove the loin from the oven and let it rest for 15 minutes, then slice. Arrange the loin in a baking dish, pour the sauce over it, and serve with French fries.
