1 cup red bell pepper, roasted, peeled, and chopped

1/2 cups whipping cream
1 chipotle chile, seedless
3 tablespoons chipotle chilli sauce, or to taste
1 kilo pork loin
1 cup dry white wine

Heat the oil and sauté the vegetables for about 5 minutes. Add the flour and let it cook for a few minutes.
Add the apple juice, the broth, the chiles, cream, and let the sauce thicken. Transfer to a blender and blend.
Strain the sauce and adjust the salt and pepper. Add more juice and broth as needed.
Season the loin with salt and pepper. Sear the loin in well-heated oil. Place it in a baking dish and put it in the oven with the wine. Cover it with aluminum foil until it is well cooked.
Remove the loin from the oven and let it rest for 15 minutes, then slice. Arrange the loin in a baking dish, pour the sauce over it, and serve with French fries.
