1 1/2 kilos pork loin , clean
1/2 kilos tomatillo
1 cup fresh cilantro
3 Poblano chiles, roasted, peeled, and deveined in strips
3 serrano chiles, (optional)
1 onion, finely chopped
2 cloves garlic
2 tablespoons oil
2 cups chicken bullion
1 1/2 cups ear corn, cooked
1 cup peas, cooked

Sear the loin in hot oil and remove it. Sauté the onion and garlic in the same pot
Blend the onion, garlic, tomato, chiles, and one cup of broth with half of the cilantro in a blender
Place the loin in a pot and add the sauce. Once it boils, lower the heat, cover, and let the loin become tender for about an hour
Season with salt and pepper. Add chicken broth as needed. Once the loin is tender, let it cool for 10 minutes
Slice the pork loin into thin cuts, return to the sauce and add the vegetables and the rest of the chopped cilantro
Add the strips, then add the corn, peas, and season. Add to the loin
