Pork Loin in Green Sauce

This pork loin in green sauce recipe is an alternative for Christmas dinner if you don’t want to make turkey this time.

  • 1 1/2 kilos pork loin , clean
  • 1/2 kilos tomatillo
  • 1 cup fresh cilantro
  • 3 Poblano chiles, roasted, peeled, and deveined in strips
  • 3 serrano chiles, (optional)
  • 1 onion, finely chopped
  • 2 cloves garlic
  • 2 tablespoons oil
  • 2 cups chicken bullion
  • 1 1/2 cups ear corn, cooked
  • 1 cup peas, cooked

  • Sear the loin in hot oil and remove it. Sauté the onion and garlic in the same pot
  • Blend the onion, garlic, tomato, chiles, and one cup of broth with half of the cilantro in a blender
  • Place the loin in a pot and add the sauce. Once it boils, lower the heat, cover, and let the loin become tender for about an hour
  • Season with salt and pepper. Add chicken broth as needed. Once the loin is tender, let it cool for 10 minutes
  • Slice the pork loin into thin cuts, return to the sauce and add the vegetables and the rest of the chopped cilantro
  • Add the strips, then add the corn, peas, and season. Add to the loin
