Prepare this juicy and exquisite pork loin in sweet plum sauce and serve it with a green salad. You will enjoy a delicious combination of flavors with a low calorie count.
In a bowl, mix the salt with the paprika, garlic powder, and onion powder. Rub the entire loin with this mixture.
Sear the loin on all sides in a hot skillet over high heat with the oil. Drain and place on a baking tray. Set aside.
For the sauce, heat the olive oil in a pot over medium heat. Cook the onion and garlic, add the dried plums, orange juice, non-caloric sweetener, chicken broth, and thyme. Cook until it comes to a boil and reduces to ¾, seasoning with a little salt. Let it cool slightly.
Blend the previous mixture until you get a smooth sauce. Pour over the loin, cover with aluminum foil, and bake for about 40 minutes, basting occasionally with the sauce.
Uncover the loin and bake for 10 more minutes. Rest for 10 minutes before slicing and serve with the sauce.
