Pork Loin in Sweet Plum Sauce

  • 1200 grams pork loin, clean
  • 1 tablespoon olive oil
  • 1 tablespoon olive oil
  • 1/4 cups onion, chopped
  • 2 cloves garlic, minced
  • 1 1/2 cups prunes, boneless
  • 1 1/4 cups orange juice
  • 2 tablespoons non-caloric sweetener, bakeable
  • 2 cups chicken broth
  • 1 tablespoon thyme

  • Preheat the oven to 200°C.
  • In a bowl, mix the salt with the paprika, garlic powder, and onion powder. Rub the entire loin with this mixture.
  • Sear the loin on all sides in a hot skillet over high heat with the oil. Drain and place on a baking tray. Set aside.
  • For the sauce, heat the olive oil in a pot over medium heat. Cook the onion and garlic, add the dried plums, orange juice, non-caloric sweetener, chicken broth, and thyme. Cook until it comes to a boil and reduces to ¾, seasoning with a little salt. Let it cool slightly.
  • Blend the previous mixture until you get a smooth sauce. Pour over the loin, cover with aluminum foil, and bake for about 40 minutes, basting occasionally with the sauce.
  • Uncover the loin and bake for 10 more minutes. Rest for 10 minutes before slicing and serve with the sauce.
