  • 1/4 cups chile powder
  • 1/2 cups vegetable oil
  • 2 tablespoons garlic, finely chopped
  • 1 tablespoon thyme
  • 1 kilo pork loin
  • 1 cup whipping cream
  • 1/2 cups cow's milk
  • 1 cup cream cheese
  • 5 chipotle chiles, rehydrated and seedless
  • 1/2 cups chipotle chile in adobo sauce
  • 1 clove garlic
  • 1/8 onions
  • salt
  • pepper
  • 1/2 tablespoons oregano
  • 1 teaspoon nutmeg
  • parsley, for decoration

  • Preheat the oven to 180° C.
  • In a bowl, mix the chili powder with the oil, garlic, and thyme.
  • On a cutting board, trim the loin, place it in a baking dish, season with salt and pepper, and cover with the chili mixture. Bake for 40 minutes or until cooked through.
  • For the chipotle sauce, blend the cream with the milk, cream cheese, dried and marinated chipotle, garlic, onion, salt, pepper, oregano, and nutmeg until you obtain a smooth sauce.
  • In a small pot, cook the sauce for 10 minutes or until it thickens and set aside.
  • On a cutting board, slice the loin.
  • Serve the loin on a plate with the sauce and garnish with parsley, accompany with mashed potatoes, and enjoy.
