Tie the loin with hemp string and season with salt and pepper.
In a baking dish, pour in the water, add the loin, and introduce the head of garlic cut in half.
Add the onion, thyme, and prunes. Cover with aluminum foil, set aside.
Bake for 45 minutes. Remove from the oven, check the cooking, and extract the prunes from the dish with a bit of their broth.
Add the bacon to another tray, place it in the oven, and brown it at the same temperature. Remove once it is well browned and crushed.
