Pork Loin with Plum Sauce and Bacon

  • 2 kilos pork loin, in pieces
  • 400 grams plum, boneless
  • 1 bunch fresh thyme
  • 1 head garlic
  • 1/4 onions
  • 500 grams bacon
  • salt
  • pepper
  • 2 cups water

  • Preheat the oven to 180º C.
  • Tie the loin with hemp string and season with salt and pepper.
  • In a baking dish, pour in the water, add the loin, and introduce the head of garlic cut in half.
  • Add the onion, thyme, and prunes. Cover with aluminum foil, set aside.
  • Bake for 45 minutes. Remove from the oven, check the cooking, and extract the prunes from the dish with a bit of their broth.
  • Add the bacon to another tray, place it in the oven, and brown it at the same temperature. Remove once it is well browned and crushed.
  • Remove the string from the loin and coat the loin in crushed bacon.
  • For the sauce: blend the prunes with a little of their liquid, onion, and garlic (the same from the cooking), heat a pot and add this sauce. Reduce and season. Serve separately.
