Pork Loin with Pumpkin Seed Sauce

Delicious pork loin with pumpkin seed sauce for these December holidays or Christmas.

  • 1 1/2 kilos pork loin
  • 1/2 cups tamarind pulp
  • 1/2 cups pumpkin seeds
  • olive oil
  • 1/2 cups tomatillo
  • 1/2 cups onion
  • 2 serrano chiles
  • 1 clove garlic
  • 3 cups chicken bullion
  • 1 cup romaine lettuce, chopped
  • 1/2 cups nut
  • 1/4 cups almonds, peeled and chopped

  • Marinate the meat with tamarind, dry it, and sear it with very hot oil
  • Sauté the onion and garlic, add the tomatoes, chilies, and the pumpkin seeds, walnuts, almonds, and lettuce. Grind very well
  • Return to the pot and let it season. Season with salt and pepper
  • Sear the loin and place it in a baking dish. Pour half of the sauce over it and cover. Let the loin cook for 1 hour and a half, making sure it does not dry out.
  • Remove the loin from the oven and let it rest for 15 minutes. Slice and serve with the remaining sauce
