2 pork tenderloin
1 package spinach
1/4 cups goat cheese, granulated
2 tablespoons bread crumbs, fresh
1 pinch salt
1 pinch pepper
2 tablespoons vegetable oil

Mix the goat cheese, breadcrumbs, and oil.
Season the pork tenderloin with salt and pepper, sear in a hot skillet. Roast in the hot oven until lightly pink, let rest for 10 minutes.
In a separate skillet, cook the spinach.
Place the spinach on the plate and top with sliced pork. Add the cheese mixture on top and broil on a hot grill until golden brown.
