  • 2 pork tenderloin
  • 1 package spinach
  • 1/4 cups goat cheese, granulated
  • 2 tablespoons bread crumbs, fresh
  • 1 pinch salt
  • 1 pinch pepper
  • 2 tablespoons vegetable oil

  • Mix the goat cheese, breadcrumbs, and oil.
  • Season the pork tenderloin with salt and pepper, sear in a hot skillet. Roast in the hot oven until lightly pink, let rest for 10 minutes.
  • In a separate skillet, cook the spinach.
  • Place the spinach on the plate and top with sliced pork. Add the cheese mixture on top and broil on a hot grill until golden brown.
