Spicy Pork Loin

  • 1 pork loin
  • 1 pinch fresh cilantro, chopped
  • 1 clove garlic
  • 4 teaspoons chicken bullion
  • 2 ancho chiles
  • 1/4 morita chiles
  • 1/4 guajillo chiles, large
  • 1/2 onions
  • 1 pinch thyme
  • 1 pinch pepper
  • 1 pinch cumin
  • 1 pinch clove
  • 1 stick unsalted butter
  • 1/2 cups vinegar

  • Clean all the chiles, soak them in water, vinegar, garlic, onion, cloves, thyme, pepper, cumin, oregano, and cilantro.
  • Blend all the ingredients from the first step, strain it, and marinate the pork loin with this sauce. Cover it and refrigerate overnight.
  • Preheat the oven to 180°C. Cover the loin with butter.
  • Cook it by basting it with the same sauce and turning it every half hour. Cook for 1 hour and 20 minutes.
