Stuffed Pork Tenderloin with Raisins and Spinach

  • 500 grams pork tenderloin
  • 3 tablespoons raisins
  • 2 tablespoons olive oil
  • 200 grams spinach
  • grams salt, to taste
  • grams pepper, to taste

  • We cook the spinach, drain it well, and sauté it with the raisins in half of the butter or in olive oil. Preheat the oven to 180 ºC.
  • We open the tenderloin in half and, with the help of a rolling pin, flatten it to make it thin.
  • We place the spinach with the raisins in the center of the tenderloin and roll it up. We wrap it in aluminum foil and put it in the oven for 50 minutes. After this time, we remove the roll from the aluminum foil and bake it for another 10 minutes.
  • We serve it sliced.
