Season the rack of ribs with salt and pepper on a large sheet of aluminum foil. Brush with olive oil and cover with another sheet of aluminum foil, making sure it is sealed tightly.
Place in the oven for 1.5 hours or until the meat is pulling away from the bone; remove from the oven and let rest for 10 minutes.
Open the aluminum pouch and brush with extra special BBQ sauce on both sides without overdoing it.
Put it back in the oven at 200°C for fifteen minutes. Flip it over and leave it for another fifteen minutes or until the fat of the meat is browned.
