Pork Crown

  • Inject the pork crown with wine, and tie it to shape it, season with salt and pepper, and cover the bones with aluminum foil. (Lightly oil the crown so that the salt and pepper stick).
  • Preheat the oven to 180° C, place the crown on a baking tray and put the herbs inside the crown to flavor it. Bake for approximately 1 hour.
  • Boil the potatoes and carrots for about 15 minutes in hot water. Remove and set aside.
  • Heat the oil and sauté the garlic, add the zucchini, potatoes, and carrots, season with salt and pepper and use this to accompany the crown when serving.
