  • Preheat the oven to 230° C.
  • On a cutting board, place the pork ribs and cover with salt, smoked paprika, cayenne pepper, olive oil, and garlic, set aside.
  • Heat a large skillet over high heat, sear the ribs on all sides until golden brown. Set aside.
  • For the sauce, heat a small pot over medium heat with oil, add the onion, garlic, morita chili, allspice, tomato, clove, and cumin. Add the tequila and cook for 5 more minutes.
  • Cook the ingredients in the skillet until soft and almost broken down. Remove from heat, let cool slightly, and blend until you get a thick sauce. Divide the preparation into two.
  • On a baking sheet lined with aluminum foil, place the pork ribs, brush with half of the sauce, and cover well with aluminum foil. Arrange the potatoes around and drizzle with olive oil, salt, and pepper to taste. Bake for about 1 hour or until the potatoes are tender and the meat is cooked.
  • Strain the remaining sauce and cook in a pot over medium heat with a bit of butter. Once it comes to a boil, add the cream, adjust seasoning, and set aside.
  • On a cutting board, cut the ribs, serve with the morita sauce and roasted potatoes. Enjoy.
