Pork Ribs with Homemade Mole

Chicken in mole prepared in a traditional way, but with some adaptations to make the recipe easier.

  • 1/4 kilos pumpkin seeds, powder
  • 3 sprigs fresh cilantro 3 sprigs fresh cilantro
  • 2 cuaresmeño chiles, seedless
  • 2 leaves lettuce 2 leaves lettuce
  • 1/2 liters broth, pork ribs
  • 8 pork ribs, (ask for a piece of the rib rack)

  • Cook the ribs in a pot with salt, herbs, onion, garlic, and salt.
  • In the blender, grind the pumpkin seeds, cilantro, lettuce, chiles, and the rib broth.
  • In a saucepan, fry and season the mole to taste.
  • Add the ribs to the mole and it's ready!!
