Pork Stew

Pork stew in cascabel and pasilla chili sauce.

  • 3 kilos pork
  • 10 tomatillos, huaje
  • 5 pasilla chiles
  • 5 cascabel chiles
  • 3 cloves garlic
  • 1 pinch cumin
  • 1 pinch oregano
  • oil , to taste
  • salt , to taste
  • pepper, to taste

  • Cut pork meat into small cubes.
  • Fry the pork meat with a little oil, seasoning with salt and pepper.
  • Cook tomatoes in plenty of water until softened.
  • Remove tomatoes from water and blend. Reserve the water.
  • Use the water where the tomatoes were cooked to soften pasilla and cascabel chiles.
  • Once softened, remove seeds from chiles and blend with tomato, garlic, cumin, and oregano. If necessary, use tomato water to add volume to the sauce.
  • Once the meat is well fried, add the blended sauce, mixing for uniformity. Season with salt and pepper to taste.
