10 tomatillos, huaje
5 pasilla chiles
5 cascabel chiles
3 cloves garlic
1 pinch cumin
1 pinch oregano
oil , to taste
salt , to taste
pepper, to taste

Cut pork meat into small cubes.
Fry the pork meat with a little oil, seasoning with salt and pepper.
Cook tomatoes in plenty of water until softened.
Remove tomatoes from water and blend. Reserve the water.
Use the water where the tomatoes were cooked to soften pasilla and cascabel chiles.
Once softened, remove seeds from chiles and blend with tomato, garlic, cumin, and oregano. If necessary, use tomato water to add volume to the sauce.
Once the meat is well fried, add the blended sauce, mixing for uniformity. Season with salt and pepper to taste.
