Pork Tacos with Tomato

  • 2 tablespoons canola oil
  • 1/2 kilos pork tenderloin, in 2 cm pieces
  • 2 teaspoons salt
  • 2 teaspoons black pepper
  • 2 Jalapeño chiles, large
  • 1/4 cups onion, chopped
  • 1 can button mushrooms, drained
  • 1 can tomato
  • 1/2 teaspoons ground cumin
  • corn tortillas, or flour

  • Heat the oil in a large skillet over medium heat.
  • Season the meat with salt and pepper.
  • Place in the skillet and stir to coat with oil.
  • Add the jalapeños and cover the skillet.
  • Let it cook on low heat for 20 minutes. Uncover and remove the jalapeños from the skillet. Chop them and set aside.
  • Let the pork cook uncovered until it is completely browned and the liquid has evaporated, about 10 minutes.
  • Add the onion and garlic. Cook and stir for a couple of minutes.
  • Add the mushrooms and cook for 1 more minute.
  • Add the chopped tomatoes and jalapeños to the pan and stir with the pork.
  • Season with cumin. Stir, cover and reduce the heat.
  • Let it cook on low heat for 10 more minutes.
  • At the end, add the stew inside the tortillas. And that's it.
