Pour the oil into a skillet over high heat, once hot add the sausage and cook until slightly browned. Remove and set aside.
For the green sauce: blend at high speed the water, tomato, garlic, onion, jalapeño pepper, and cilantro, then season with salt.
Heat the oil in a saucepan and pour in the green sauce, then add the bean broth, cook on high heat for 3 minutes, and then add the potatoes and beans. Finally, season with salt and pepper.
Add the sausage along with the slices of serrano pepper and mix well with the other ingredients.
Serve the sausage with beans in green sauce on a deep plate and garnish with cilantro.
