Sausage with Beans in Green Sauce

  • 3 tablespoons olive oil
  • 1 kilo longaniza, chopped into pieces
  • 2 tablespoons olive oil
  • 1/4 cups water, for the green sauce
  • 250 grams tomatillo, cooked, for the green sauce
  • 2 cloves garlic, for the green sauce
  • 1/4 onions, for the green sauce
  • 2 Jalapeño chiles, for the green sauce
  • 1/2 bunches cilantro, for the green sauce
  • salt, for the green sauce
  • 1/3 cups bean broth
  • 1 cup potato, canned, cooked and diced

  • 1 cup pinto beans, drained
  • 1/2 cups serrano chili slices
  • cilantro leaves, for garnish

  • Pour the oil into a skillet over high heat, once hot add the sausage and cook until slightly browned. Remove and set aside.
  • For the green sauce: blend at high speed the water, tomato, garlic, onion, jalapeño pepper, and cilantro, then season with salt.
  • Heat the oil in a saucepan and pour in the green sauce, then add the bean broth, cook on high heat for 3 minutes, and then add the potatoes and beans. Finally, season with salt and pepper.
  • Add the sausage along with the slices of serrano pepper and mix well with the other ingredients.
  • Serve the sausage with beans in green sauce on a deep plate and garnish with cilantro.
