Street Vendor Skewers with Esquites

  • 3/4 cups pancake mix, for the skewers
  • 3/4 cups wheat flour, for the skewers
  • 1/2 cups sparkling water, for the skewers
  • 2 eggs, for the skewers
  • 6 sausages
  • 2 cups vegetable oil, for frying
  • 1/4 onions, finely chopped
  • 1 tablespoon garlic, finely chopped
  • 5 ears corn, shucked
  • 2 cups water, for the esquites
  • salt
  • 1 sprig epazote
  • mayonnaise, to accompany
  • queso fresco, to accompany
  • lime, to accompany
  • piquín chile, to accompany

  • For the skewers, mix the ingredients for the skewers in a bowl and whisk for 3 minutes until you have a smooth mixture.
  • Insert the sausages onto skewers.
  • Heat the oil over medium heat, dip the skewers in the previous mixture and fry for 5 minutes until they turn golden, drain on absorbent paper and set aside.
  • For the esquites, heat the oil over low heat, add the onion, garlic, corn, and cook for 7 minutes.
  • Add the water, epazote, and cook for 10 more minutes until the corn is cooked, let it reduce.
  • Serve the skewers with the esquites and accompany with mayonnaise, cheese, chili piquín, and lime.
