Spicy Pork Ribs

Delicious grilled ribs with a spicy sauce featuring hints of ginger, soy, and lemon.

  • 1 onion, chopped
  • 2 cloves garlic, chopped
  • 2 1/2 centimeters ginger, freshly sliced
  • 1 guindilla pepper, seedless chopped
  • 5 tablespoons soy sauce
  • lemon juice
  • sugar
  • peanut oil
  • 1 kilo pork ribs
  • salt , to taste
  • pepper, to taste

  • Preheat the grill, and cut the pork rib rack if it comes whole.
  • Put the onion, garlic, ginger, chili, and soy sauce in a food processor and make a paste. Transfer it to a serving bowl, add lemon juice, sugar, and oil. Season with salt and pepper to taste.
  • Place the ribs in a preheated wok or large pot and pour in the soy mixture. Bring to a boil and let simmer, stirring frequently for about 30 minutes. (If it looks dry, add water)
  • Remove the ribs and reserve the sauce.
  • Grill the ribs over medium heat, turning and basting with the sauce for 20-30 minutes. Transfer to a platter and serve immediately.
