Stuffed Pineapple with Pastor

Because we love tacos al pastor, we have created a completely original and different version: a delicious and juicy pineapple stuffed with al pastor meat, wrapped in bacon so juicy that you will love it, served with tortillas, onion, cilantro, and a taquería sauce.

  • 5 guajillo chiles, soaked, for the marinade
  • 1/2 cups achiote paste, for the marinade
  • 1/4 cups vinegar, for the marinade
  • 3 tablespoons orange juice, for the marinade
  • 1 teaspoon garlic powder, for the marinade
  • 1 teaspoon pepper, for the marinade
  • 1 teaspoon dried oregano, for the marinade
  • salt, for the marinade
  • 1 kilo pork, beef, cut into cubes
  • 1 tablespoon vegetable oil
  • 1 pineapple
  • 20 slices bacon
  • onion, for serving
  • fresh cilantro, for serving
  • lime, for serving
  • tortillas, for serving
  • red salsa, for serving

  • Preheat the oven to 180° C.
  • Blend the guajillo chili with the achiote paste, vinegar, orange juice, garlic powder, pepper, oregano, and salt.
  • Pour the previous preparation over the meat and marinate for 20 minutes.
  • In a skillet over low heat, add the oil, cook the meat for 10 minutes or until cooked. Set aside.
  • On a cutting board, peel the pineapple, leaving the crown, hollow out the pineapple with the help of a knife and spoon, fill the pineapple with the meat, wrap with bacon slices, and secure with toothpicks. Bake for 20 minutes until the bacon is golden, turning occasionally.
  • Slice and serve with onion, cilantro, and tortillas.
