Suadero Placero Tacos

One of the most popular tacos in Mexico is suadero tacos, so we decided to prepare them in a unique way. Cook it with evaporated milk and spices like clove, pepper, cilantro, and orange. Serve the tacos in guajillo tortillas with nopales, fresh cheese, onion, cilantro, the crunchy touch of chicharrón, and of course, chili árbol salsa is a must. Amazing!

  • 2 kilos rose meat
  • 1/4 cups Sal Sol® sea salt
  • 2 liters water
  • 1 cup evaporated milk
  • 1 orange, cut in half
  • 1 teaspoon allspice berry
  • 1/4 cups fresh cilantro, with root
  • 1/4 teaspoons cloves
  • 1 white onion, cut into quarters
  • 3 cloves garlic
  • 2 leaves bay
  • 1 cup water, hot
  • 3 guajillo chiles
  • Sal Sol® sea salt
  • 1/2 kilos masa dough
  • 3 tablespoons vegetable oil
  • onion, finely chopped for serving
  • pork rinds, chopped for serving
  • radish, sliced, for serving
  • nopal, cured, for serving
  • queso fresco, crumbled, for serving
  • fresh cilantro, finely chopped for serving
  • lime, for serving
  • salsa, for serving

  • On a board, place the suadero and rub with Sal de Grano de Mar Sal Sol®.
  • In a deep skillet over high heat, place the suadero, add water, evaporated milk, orange, allspice, cilantro, clove, onion, garlic, and bay leaf. Cover with aluminum foil and cook for 2 hours. Remove from cooking and finely chop the meat on a board.
  • For the tortillas, in a bowl, hydrate the chilies with hot water and let soak until soft. Mash in a molcajete with a bit of the soaking liquid and Sal de Mar Sal Sol® until a paste forms.
  • Add the preparation to the corn dough and the necessary amount of water. Knead until smooth and slightly moist. With the help of a press, form your tortillas and cook on a griddle over medium heat.
  • Heat a skillet over medium heat with the oil, cook the chopped suadero until browned. Heat the tortillas on the griddle and add the suadero to make the tacos.
  • Serve with onion, chicharrón, radish, nopales, fresh cheese, and cilantro. Accompany with lime and salsa.
