  • 1 kilo pork chump, in pieces
  • 1 head garlic
  • 1/2 onions
  • 3 guajillo chiles, deveined and soaked
  • 3 ancho chiles, deveined and soaked
  • 1 teaspoon oregano
  • 1 teaspoon cumin
  • 1/4 cups white vinegar
  • 1/2 cups meat cooking broth
  • 2 cloves garlic
  • salt
  • pepper
  • 3 tablespoons lard
  • 350 grams lard, for the dough
  • 1 kilo masa mix for tamales, for the dough
  • 300 milliliters pork broth, for the dough
  • 1 tablespoon baking powder, for the dough
  • salt, for the dough
  • banana leaf, roasted
  • onion, pickled, for garnish

  • In a pot with boiling water, cook the pork with garlic, onion, and salt over medium heat. Using a slotted spoon, remove the foam, and continue cooking until done. Reserve the broth and shred the meat.
  • Blend the chiles with oregano, cumin, vinegar, cooking broth, garlic, onion, and season with salt and pepper.
  • In a saucepan, heat the lard over medium heat, add the shredded meat, pour in the sauce, and season with salt and pepper, cooking for 10 minutes or until reduced. Cool down.
  • For the tamale dough, beat the lard with a little cooking broth, add the tamale flour, baking powder, salt, and beat until you have a soft and homogeneous dough. Adjust seasoning.
  • Place the banana leaf over the mold, add half of the tamale dough, the meat, and cover with the remaining dough, cover with the banana leaf, and cook in a water bath for 1 hour.
  • Garnish with pickled onions with habanero.
