Tequila Chops

  • 2 tablespoons butter, in medium cubes, at room temperature
  • 600 grams pork chops
  • salt
  • pepper
  • 1 cup shallot, finely chopped
  • 1 tablespoon garlic, finely chopped
  • 1/2 cups Jalapeño chile, in small cubes
  • 1 teaspoon ground cumin
  • 1/2 cups Tequila
  • 1 cup chicken broth
  • Jalapeño chile, sliced, for garnish
  • parsley, finely chopped
  • mashed potatoes, for garnish
  • rice, for garnish

  • Heat the butter in a skillet over medium heat. Add the chops, season with salt and pepper, and cook for 5 minutes on each side. Remove and set aside to continue cooking.
  • Add the shallot, garlic, jalapeño, and cumin in the same skillet and cook for 2 minutes. Pour in the tequila, bring to the flame, and flambé the alcohol for 2 minutes.Once the flame goes out, add the chicken broth and the chops. Cover and cook for 5 more minutes or until fully cooked.
  • Serve the tequila chops, garnish with jalapeño and parsley, and accompany with mashed potatoes and rice.
