Tortas Ahogadas Jaliciences

The torta ahogada is one of the most typical and representative dishes of the state of Jalisco in Mexico, particularly from the city of Guadalajara; although its popularity has spread to different regions of the country.

  • 1/2 kilos pork, solid
  • 6 bolillo rolls
  • 50 grams árbol chile
  • 1 leaf bay
  • 1 pinch oregano
  • 1 pinch marjoram
  • 1/2 kilos tomato
  • 2 red onions
  • 2 cloves garlic
  • 1 pinch cumin
  • 1 pinch clove
  • 1 pepper
  • salt, to taste

  • Cook the meat with bay leaf, pepper, a clove of garlic, and a piece of onion, adding salt to taste, and wait until it is completely tender and drain the water.
  • Boil the tomato and blend it with 2 cups of warm water along with a piece of garlic, onion, and a pinch of salt, cumin, and clove. Season the sauce in a pan with a tablespoon of oil and add the oregano.
  • Cook the chiles separately with garlic and onion. Blend to prepare the spicy sauce, which you can add to the tomato sauce to your liking.
  • Open the bolillos in half, remove the crumb, spread refried beans on both sides, fill them with the meat, and submerge them in the red sauce. Add the spicy sauce if you wish and enjoy.
