Veracruzano Corn Tamales

  • 10 ears corn
  • 250 grams pork
  • 2 tomatoes
  • 150 grams lard
  • 1 1/2 tablespoons sugar
  • 1 ancho chile
  • oil
  • epazotes

  • Shell the corn and save the husks to wrap the tamales, scrape and grind the corn kernels.
  • Mix the corn dough with salt, lard, and sugar. Cook the ancho chili and tomatoes, cook the meat.
  • Place dough on each corn husk, fill it with meat and the stew with tomato, ancho chile, and a sprig of epazote. Steam them for thirty minutes. Serve.
