Prepare a classic Mexican recipe like this Pollo al Pastor, but cooked on a grill. We will tell you how to marinate the chicken al pastor and how to measure the correct temperature to cook it in a different way.
Prepare your grill for medium indirect heat (350º - 450ºF or 175º - 232ºC).
Mix the salt, sugar, and water in a bowl and pour in the chicken. Refrigerate overnight before grilling.
Mix all the adobo ingredients and set aside. Remove the chicken from the water container, dry with paper towels, and generously rub with the adobo, inside and out.
Place the chicken on the bird grill and transfer to the grill for 45 minutes over indirect heat. Baste with the adobo every 10 minutes.
To prepare the morita chili sauce, grill all the ingredients over direct heat, making sure not to burn them. Blend and season with salt to taste, set aside.
When the chicken indicates an internal temperature of 150ºF or 65ºC, raise the grill temperature to high indirect heat (450º - 550ºF - 232º - 287ºC) for 15 more minutes. Remove the chicken from the grill when the internal temperature reaches 170ºF or 76ºC.
Serve hot. We recommend making chicken tacos and accompany with cilantro, onion, pineapple, and sauce to taste.
