Pollo al Pastor on the Grill

Prepare a classic Mexican recipe like this Pollo al Pastor, but cooked on a grill. We will tell you how to marinate the chicken al pastor and how to measure the correct temperature to cook it in a different way.

  • 1 chicken
  • 2 liters water
  • 3 tablespoons coarse salt
  • 2 tablespoons sugar
  • 1 tablespoon achiote paste, for the pastor
  • 1/2 cups orange soda, for the pastor
  • 2 guajillo chiles, for the pastor
  • 1 tablespoon ground cumin, for the pastor
  • 1 tablespoon dried oregano, for the pastor
  • 2 tablespoons salt, for the pastor
  • 1 tablespoon paprika, for the pastor
  • 1/2 beets, boiled, for the pastor
  • 5 morita chiles, for the morita sauce
  • 3 árbol chiles, for the morita sauce
  • 1/2 kilos tomatillo, for the morita sauce
  • 1/2 white onions, for the morita sauce
  • 4 cloves garlic, for the morita sauce
  • 1 tablespoon salt, for the morita sauce
  • 1/2 pineapples, grilled
  • 1/2 bunches fresh cilantro, finely chopped
  • 1 onion, finely chopped

  • Prepare your grill for medium indirect heat (350º - 450ºF or 175º - 232ºC).
  • Mix the salt, sugar, and water in a bowl and pour in the chicken. Refrigerate overnight before grilling.
  • Mix all the adobo ingredients and set aside. Remove the chicken from the water container, dry with paper towels, and generously rub with the adobo, inside and out.
  • Place the chicken on the bird grill and transfer to the grill for 45 minutes over indirect heat. Baste with the adobo every 10 minutes.
  • To prepare the morita chili sauce, grill all the ingredients over direct heat, making sure not to burn them. Blend and season with salt to taste, set aside.
  • When the chicken indicates an internal temperature of 150ºF or 65ºC, raise the grill temperature to high indirect heat (450º - 550ºF - 232º - 287ºC) for 15 more minutes. Remove the chicken from the grill when the internal temperature reaches 170ºF or 76ºC.
  • Serve hot. We recommend making chicken tacos and accompany with cilantro, onion, pineapple, and sauce to taste.
