  • 1/2 pork heads, clean and in pieces
  • water
  • 1 onion
  • bay
  • salt , to taste
  • corn tortillas
  • 10 tomatillos, (for the sauce)
  • 1/2 onions, (for the sauce)
  • 1 green chile , (for the sauce)
  • 1 avocado, (for the sauce)
  • fresh cilantro, (for the sauce)
  • salt , (for the sauce)

  • Wash the pieces of head and place them in a steamer with onion, bay leaf, and salt. Once cooked, shred or chop the meat.
  • Serve in portions on a tortilla and roll it up.
  • For the sauce. Wash the raw tomatillos. Blend tomatillo, chili, avocado, onion, cilantro, and salt.
