Season the meat with salt and pepper and sear it on both sides. Place it in a baking dish and pour 1/2 cup of tequila over it; bake for 50 minutes.
Roast and soak the chiles and blend with the garlic, water, and remaining tequila; fry in a little oil, season with salt and pepper, and let it come to a boil.
Pour the sauce over the meat.
