Slice the pork loin and place it in a bowl. (If you want to do it with the whole loin, you should sear it first in oil; this will help with better cooking). Put the apple juice and one peeled apple, the broth, pepper, and salt in the blender. With this, drizzle over the pork loin and let it marinate for 2 hours in the refrigerator.
Arrange the pork loin in a baking dish and pour the marinade over it, add the fried chilies and the other peeled sliced apples, cover with aluminum foil, and place in the oven at 350ºF for an hour and a half.
