Pork loin in sweet and sour sauce

  • 1/4 cups raw sugar, for marinade
  • 3/4 cups honey, for marinade
  • 2 cloves garlic, finely chopped, for marinade
  • 1 tablespoon mustard, for marinade
  • 1/2 cups orange juice, for marinade
  • 1 tablespoon ginger, finely chopped, for marinade
  • 1 tablespoon onion powder, for marinade
  • 1/4 tablespoons cinnamon, for marinade
  • 1/2 cups sweet chili sauce, for marinade
  • 2 tablespoons paprika, for marinade
  • 1 pinch salt, for marinade
  • 1 pinch pepper, for marinade
  • 1 pork tenderloin

  • Preheat the oven to 200° C.
  • In a bowl, mix the soy sauce, sugar, honey, garlic, mustard, orange juice, ginger, onion powder, cinnamon, sweet chili sauce, paprika, salt, and pepper. Mix until all the ingredients are incorporated and set aside.
  • On a cutting board, tie the loin with hemp string to prevent it from deforming, place the loin in the marinade, and baste until the entire piece is covered. Marinate for 30 minutes and set aside.
  • Heat a T-fal® Hard Titanium+ skillet over medium heat; when the red spot (Thermo-spot) is completely red, place the marinated loin in the skillet along with all the marinade liquid. Lower the temperature and cook for 30 minutes, basting constantly with the liquid.
  • Remove from the skillet and place the loin on a baking tray with all the liquid. Bake for 15 to 20 minutes, basting constantly with the juices until it is glazed and the loin is cooked. Remove from the oven, let it rest before slicing, and serve.
