This loin, cooked with a sweet and sour spiced sauce made with soy sauce, sweet chili sauce, orange juice, and a hint of garlic, is the perfect dish that has a blend of distinct and contrasting flavors.
In a bowl, mix the soy sauce, sugar, honey, garlic, mustard, orange juice, ginger, onion powder, cinnamon, sweet chili sauce, paprika, salt, and pepper. Mix until all ingredients are combined and set aside.
On a cutting board, tie the loin with hemp string to prevent it from deforming, place the loin in the marinade and coat until the entire piece is covered, marinate for 30 minutes and set aside.
Heat a T-fal® Hard Titanium+ skillet over medium heat; when the red spot (Thermo-spot) is completely red, place the marinated loin in the skillet along with all the marinade liquid. Lower the temperature and cook for 30 minutes, basting constantly with the liquid.
Remove from the skillet and place the loin on a baking tray with all the liquid. Bake for 15 to 20 minutes, basting constantly with the juices until it is glazed and the loin is cooked. Remove from the oven, let it rest before slicing, and serve.
