Pork Loin with Oven Vegetables

Pork loin stuffed with ham and onion with assorted vegetables baked with pancake syrup. A different and delicious recipe that will surprise everyone. It’s a dish where the loin is juicy, the vegetables are crunchy, and everything has that sweet flavor of honey. The best combination.

  • 1 pork shank, (clean loin)
  • 100 grams deli ham
  • 200 grams new potatoes
  • 1/2 onions, chopped into medium pieces
  • 1/2 cups corn kernel
  • 100 grams baby carrot
  • 1/2 cups peas, or peas
  • 2 bell peppers
  • 15 grams chives, chopped
  • 15 grams parsley , chopped
  • 4 tablespoons unsalted butter
  • 2 cloves garlic, chopped
  • 1 pinch salt
  • 1 pinch pepper
  • 1 cup maple syrup

  • Preheat the oven to 200°C.
  • Open the loin and season with salt and pepper. Let it rest for 10 minutes.
  • Stuff the loin with ham and a little onion and add a bit of maple syrup inside.
  • Place the loin in a baking dish covered with aluminum foil.
  • Add the potatoes, the remaining onion, corn kernels, two red bell peppers, baby carrots, and peas.
  • Sprinkle a little salt, parsley, green onion, and butter over the vegetables. Cover with aluminum foil and cook for 30 minutes.
  • Remove from the oven, uncover it, add the cup of honey, and return to the oven for another 30-45 minutes to finish cooking.
