Pork Loin with Plums

  • 2 kilos pork loin
  • 1/4 cups lemon
  • 1 pinch fines herbs
  • 2 teaspoons onion, grated
  • 1 cup beer
  • 1 bolillo roll
  • 2 teaspoons mustard
  • 3 teaspoons honey
  • 3 teaspoons soy sauce
  • 2 cups apple, chopped
  • 1 cup seedless prune
  • 1 cup nut
  • pepper
  • 3 tablespoons oil

  • 1 cup cow's milk
  • 1 tablespoon white wine
  • 2 tablespoons cream

  • Preheat the oven to 350 degrees Celsius.
  • Clean the pork loin with cold water trying to carefully remove the fat.
  • Cut lengthwise to form a flat sheet.
  • Rub the meat with a mixture made of lemon, salt, pepper, herbs, grated onion, 1 teaspoon of oil, and one cup of beer.
  • Let the meat marinate with these ingredients for at least one hour.
  • To make the filling, soak the bread in a cup of warm milk and add honey, mustard, and soy sauce. Add the apples, prunes, and walnuts.
  • Place the filling in the center of the loin and tie it like a roll.
  • Place it in a baking dish and cover it with the marinade juices, cover with aluminum foil and put it in the oven for one and a half hours.
  • When taking it out of the oven, use the meat juices with a tablespoon of white wine and 2 tablespoons of cream to make a sauce for serving.
  • Let the meat rest for 15 minutes outside the oven and slice before plating.
