Pork Loin with Roquefort Sauce and Russian Salad

  • 300 grams roquefort cheese, or blue cheese
  • 200 milliliters chicken broth , or chicken broth
  • 1 onion
  • 1 pinch black pepper
  • 3 tablespoons olive oil
  • 2 kilos pork loin
  • 3 kilos potato
  • 1 kilo carrot
  • parsley

  • We peel the potatoes and carrots, cut them into cubes, and boil them. When they are ready, we let them cool and then season with a little salt and oil. Stir in some mayonnaise or cream.
  • We place the pork loin in a dish, season with salt, and add just pepper and a little garlic powder. We put it in the oven until it is ready.
  • Finally, when the meat is almost done, we make the sauce: we put a little olive oil in the pan with the onions, stir, and add the cheese cubes. When it forms a paste, we add the chicken broth (previously prepared). Before removing from heat, we add parsley, pepper, and nutmeg. Turn off and serve over the meat and enjoy!
