Wash the meat and cook it with half an onion, a clove of garlic, and salt until it is well cooked.
When it is cooked, add the oil right there so that when the water dries, the meat can fry and brown well.
On a griddle, peel the tomatoes and roast them along with some dried chiles called rayados, which are similar to dried chipotles. First, roast the chiles and soak them in water to soften them a bit, then blend them with garlic, onion, and salt, and once the tomatoes are roasted, blend them as well.
Once the sauce is made and the meat is fried, drain the excess oil from the meat and add the sauce, allowing everything to season together, and it's ready.
