  • 1 shoulder amara
  • 400 grams button mushrooms, fresh
  • 8 garlic
  • 10 grams chives, fresh
  • 3 guajillo chiles
  • 4 grams salt
  • 40 milliliters olive oil
  • 8 new potatoes
  • 8 asparagus
  • 8 Romaine lettuce
  • 8 dehydrated tomato oil, cambray
  • 30 grams butter
  • 4 grams pepper

  • Season the Amara pork shoulder with salt and pepper.
  • Place in a pan with a little oil and cook between 63 and 68°C or to your desired doneness, making sure to flip the meat only once.
  • Clean the mushrooms and slice them.
  • Finely chop the green onions.
  • Finely chop the garlic and slice the guajillo chiles.
  • Place the oil in the same pan where the meat was cooked and heat it, sauté the garlic and chiles in the oil.
  • Incorporate the green onions and finally the mushrooms.
  • Season with salt.
  • Serve over the meat.
  • In another pan, sauté the potatoes and asparagus with butter and season with salt and pepper.
  • Garnish the dish with potatoes, asparagus, lettuce, and tomatoes.
