Blend the garlic, onion, cooked chiles, and a little water used in the cooking.
Heat a skillet over medium heat and fry the pressed pork rind for about 8 minutes, add the guajillo chili sauce and mix well. Let it season for 4 minutes and set aside.
Place a griddle over medium heat and put 4 cactus tortillas on it, add a slice of cheese to each tortilla and a portion of pork rind. Fold in half and repeat the process until all tortillas are used.
Once the quesadillas are ready, add lettuce to taste.
