Presto Carnitas

  • 3 tablespoons canola oil
  • 1.3 kilos pork tenderloin, head, cut into 3.5 cm cubes
  • 2 Jalapeño chiles, chopped or to taste
  • 1 serrano chile, chopped or to taste
  • 1 onion, large chopped
  • 4 cloves garlic, chopped
  • 2 teaspoons fresh cilantro, chopped
  • 3 teaspoons ground cumin
  • 1 1/2 cups beef broth

  • Heat oil in a pressure cooker over medium-high heat.
  • Brown the pork cubes in the hot oil. Add the poblano pepper, jalapeño, serrano, onion, garlic, cilantro, cumin, and beef broth.
  • Cover and seal, let the pressure rise, and reduce the heat to maintain stable pressure.
  • Cook at medium pressure for 1 hour.
  • Remove the pot from the heat, place it in the sink, and let a stream of cold water run over the lid until the pressure drops completely.
  • Carefully uncover and serve the carnitas.
