Preparation Pulled Pork: Mix thyme, cumin, rosemary, paprika, and ground black pepper perfectly in a molcajete.
Clean the meat and cover with the spice mixture, placing it in a container. Cover tightly and let marinate for 8 to 12 hours in the refrigerator.
Remove from refrigeration and place in a baking dish. Add the vinegar, bay leaf, sugar, and garlic clove.
Cover tightly with aluminum foil and bake at 130°C
After the time has passed, remove from the oven. Uncover and use two forks to shred the meat.
Place the result on a plate and serve as is or as a filling for hamburger buns.
For the Amara Shoulder pulled pork sandwich: Heat the bread on the grill or griddle.
Place lettuce to taste at the base of the bread.
Place a portion of Pulled Pork on top of the lettuce.
Serve with the Coleslaw and garnish with pickles. Don’t forget to place the bread lid.
Procedure for the Coleslaw: Mix all ingredients in a bowl and let sit for at least 2 hours before using.
