Quick Beef Fajitas

A delicious recipe for marinated beef cooked with peppers, onions, and ready to enjoy with tortillas and guacamole.

  • 1/2 cups lemon juice
  • 1/2 cups vegetable oil
  • 1/2 cups soy sauce
  • 1/4 cups brown sugar
  • 3 cloves garlic, finely chopped
  • 2 tablespoons pepper
  • 1 kilo skirt steak
  • 1 red bell pepper
  • 1 green bell pepper
  • yellow bell peppers
  • 12 corn tortillas
  • 1 onion, in strips
  • avocados
  • green salsas

  • Prepare the marinade by mixing lemon juice, vegetable oil, soy sauce, brown sugar, garlic, and coarse pepper in a deep bowl.
  • In a resealable bag, marinate the beef with half of the marinade and refrigerate for at least 3 hours or up to 10 before cooking.
  • Soak the peppers and onions in the remaining marinade and refrigerate.
  • Remove the beef from the marinade and slice it into strips.
  • Heat a skillet over high heat until very hot and sear the meat, then lower the heat and continue cooking to your desired doneness for the fajitas.
  • Meanwhile, in another skillet, cook the onions and peppers over high heat until browned.
  • Heat the tortillas and serve.
  • Serve the beef fajitas with the peppers and tortillas with guacamole and salsa.
