Rabbit in Red Wine

Delicious marinated rabbit with red wine and vegetables, it is a very exotic dish but a good way to prepare rabbit. It is recommended to serve with vegetables; if not, you can accompany it with rice or some mushrooms.

1 rabbit, approximately 2 kilos
2 onions
2 leeks
2 carrots
1 liter red wine
1 tomato
salt , and pepper
flour
bay
2 tablespoons oil
beef consomme
Preparation

Marinate the rabbit for a whole night, previously cleaned, with half of the chopped vegetables and seasoned bay leaves.
Separate the rabbit and sprinkle flour over it until a thin layer is achieved.
Season with salt and pepper and fry with the two tablespoons of oil until it reaches a golden color.
Remove and separate.
Season with salt and pepper and sauté the remaining vegetables, adding the wine and vegetables used for marinating.
Add the finely diced tomato and let it cook for 2-3 minutes.
Add the beef broth and heat.
Add the rabbit to the mixture and wait until it is cooked through.
Remove and serve.
