Rabbit in Red Wine

Delicious marinated rabbit with red wine and vegetables, it is a very exotic dish but a good way to prepare rabbit. It is recommended to serve with vegetables; if not, you can accompany it with rice or some mushrooms.

  • 1 rabbit, approximately 2 kilos
  • 2 onions
  • 2 leeks
  • 2 carrots
  • 1 liter red wine
  • 1 tomato
  • salt , and pepper
  • flour
  • bay
  • 2 tablespoons oil
  • beef consomme

  • Marinate the rabbit for a whole night, previously cleaned, with half of the chopped vegetables and seasoned bay leaves.
  • Separate the rabbit and sprinkle flour over it until a thin layer is achieved.
  • Season with salt and pepper and fry with the two tablespoons of oil until it reaches a golden color.
  • Remove and separate.
  • Season with salt and pepper and sauté the remaining vegetables, adding the wine and vegetables used for marinating.
  • Add the finely diced tomato and let it cook for 2-3 minutes.
  • Add the beef broth and heat.
  • Add the rabbit to the mixture and wait until it is cooked through.
  • Remove and serve.
