Rabbit in White Wine

A wonderful rabbit in white wine, perfect for a lovely picnic day.

  • 1 rabbit, in pieces
  • 3 cloves garlic
  • 1 saffron
  • 1 handful almonds
  • parsley, chopped
  • white wine
  • 1/2 cubes meat broth
  • vegetable oil
  • salt

  • We salt the rabbit and put it in oil to fry.
  • We put salt in the mortar, crush the garlic, saffron threads, almonds, the broth cube, and parsley.
  • We add water and wine, about the same amount, and stir.
  • When the rabbit is fried, we add what we crushed in the mortar and let it reduce, leaving us with some sauce; if necessary, add more wine or more water.
