Ranch Roasted Chicken

  • 8 guajillo chiles, rehydrated and seedless
  • 6 ancho chiles, rehydrated and seedless
  • 4 morita chiles, rehydrated and seedless
  • 4 cloves garlic
  • 1/4 onions
  • 1 tablespoon cumin, whole
  • 4 allspice berries
  • 1 tablespoon black pepper
  • salt
  • 1 chicken, clean
  • French fries
  • pickled chiles
  • corn tortillas

  • Roast the onion and garlic for 10 minutes. Roast the cumin and peppercorns for 5 minutes.
  • Blend the onion, garlic, and spices with the guajillo chili, ancho chili, and morita chili, and season with salt. Set aside.
  • Place the chicken on a tray and season with salt, carefully lifting the skin of the chicken to avoid tearing it.
  • Brush the chicken with the marinade, covering each piece and also brushing the inside of the chicken.
  • Bake the chicken at 200 °C for 40 minutes.
  • Serve in the same baking dish and accompany with French fries, pickled chilies, and tortillas.
