8 guajillo chiles, rehydrated and seedless
6 ancho chiles, rehydrated and seedless
4 morita chiles, rehydrated and seedless
4 cloves garlic
1/4 onions
1 tablespoon cumin, whole
4 allspice berries
1 tablespoon black pepper

1 chicken, clean

Roast the onion and garlic for 10 minutes. Roast the cumin and peppercorns for 5 minutes.
Blend the onion, garlic, and spices with the guajillo chili, ancho chili, and morita chili, and season with salt. Set aside.
Place the chicken on a tray and season with salt, carefully lifting the skin of the chicken to avoid tearing it.
Brush the chicken with the marinade, covering each piece and also brushing the inside of the chicken.
Bake the chicken at 200 °C for 40 minutes.
Serve in the same baking dish and accompany with French fries, pickled chilies, and tortillas.
