Reheated Turkey Torta

  • 1/4 cups bacon, finely chopped, for refried beans
  • 2 cups black beans, for refried beans
  • 1/4 cups Chihuahua cheese, finely grated, for refried beans
  • 1 pinch salt, for refried beans
  • 1/4 cups chicken broth, for reheating the turkey
  • turkey, and/or spicy, from the reheating
  • 4 bolillo rolls, cut in half
  • 1/4 cups mayonnaise
  • 1 avocado, sliced
  • Chihuahua cheese, sliced, for turkey torta
  • pickled Jalapeño chiles

  • For the refried beans, heat a small pot over high heat and cook the bacon until it releases its fat, add the beans, Chihuahua cheese, and cook until the cheese melts, season to taste with salt. Set aside.
  • Heat a pan over medium heat, reheat the turkey with chicken broth, remove, and set aside.
  • On a board, place the bolillos and spread mayo on one side and refried beans on the other. For the natural turkey torta, add the turkey, pickled vegetables, and close. For the spicy turkey torta, add the spicy turkey, place cheese slices, pickled jalapeños, and sliced onion.
  • Heat the bolillos on a griddle. Remove from the griddle and add avocado slices to taste and more chiles or pickled vegetables if desired. Cut the bolillo in half, serve, and enjoy.
